How do you make the perfect beek and ale pie?

I really like beef and ale pie's and was wondering how to make them.|||You'll need loads of birds for enough beaks....alternatively just Google it or look on some of the food sites - bbc.co.uk/food for instance - then when you find a recipe you like, just print it out. Far simpler than wading through loads here that you may not like anyway!|||Ingredients


900g/2lb diced stewing beef


25g/1oz flour, seasoned with salt and freshly ground black pepper, plus extra for dusting


100g/3陆oz butter


2 onions, roughly chopped


2 cloves garlic, roughly chopped


2 medium carrots, roughly chopped


150g/5陆oz button mushrooms


2 sprigs fresh thyme


1 bay leaf


400ml/14fl oz good-quality ale


500ml/17fl oz beef stock


salt and freshly ground black pepper


1 free-range whole egg beaten with 1 free-range egg yolk


300g/10陆oz ready-made rolled puff pastry











Method


1. Dip the meat into the seasoned flour, then place a large lidded pan on the hob.


2. Heat half the butter in the pan and add the meat. Sear all over until golden brown.


3. Add the vegetables and herbs, then pour in the ale and stock. Bring to a simmer, then cover with a lid and gently simmer on the stove for 1陆 hours.


4. Preheat the oven to 220C/425F/Gas 7.


5. Once cooked, season the stew, add the remaining butter and tip into an ovenproof serving dish. Brush the edge of the dish with the beaten egg.


6. If necessary, roll out the pastry using as little flour as possible and place over the dish. Pinch the edges of the dish so that the pastry will stick to it and trim off any remaining pieces of pastry from around the edge. Cut the leftover pastry into leaves and add them to the top, using the beaten egg as a 'glue', for decoration.


7. Brush the pastry top thoroughly with the remaining beaten egg and place on a baking tray. Bake in the oven for 20-30 minutes until the pastry is golden brown on top. Serve.








|||1 Kg steak (chuck or blade)


3 tablespoons olive oil


8 pickling onions (small)


4 rashers of bacon (diced)


2 cloves of garlic (chopped)


200 ml red wine


300 ml beef stock


12 baby new potatoes (quartered)


2 tablespoons cornflour


4 tablespoons water


375g/12oz puff pastry


1 egg (lightly beaten)


Thyme leaves


Salt and Pepper to season





1. Cook half the meat in the Large Saucepan in half the oil for 4 - 5 minutes until well browned, remove from pan.


2. Cook the remaining meat in the Large Saucepan the rest of the oil again until well browned and remove from pan.


3. Cook the onions and bacon in the Large Saucepan for 3-4 minutes - medium heat.


4. Add the garlic and cook for a further minute.


5. Put all the meat back into the saucepan, and add the wine, stock, thyme, salt and pepper.


6. Cover the saucepan, bring to the boil, then simmer for 30 minutes.


7. Remove the lid, simmer for 15 minutes to reduce the stock.


8. Add the potatoes and cook for a further 15 minutes or until tender.


9. Mix the cornflour with the water and mix to a smooth paste.


10. Add to the Saucepan and stir until it boils and thickens.


11. Pre-heat the oven to 180C/350F or gas mark 4.


12. Place the mix from the saucepan into an ovenproof dish.


13. Roll the pastry onto a floured surface to about 1/8 inch (3mm)


14. Place the pastry onto the ovenproof dish, covering all the meat.


15. Brush the pastry with the egg, and make a slit in the top.


16. Bake for 20 minutes or until brown. |||Well I suppose there are different ways but I buy good braising steak and cut into pieces ... Makegravy with Bisto and beer Usually cook for ten minutes in pan then line a pie dish with pastry put the meat in . pastry lid and bake in oven.. 30/40 mins... Serve with vegetables of choice ,, Some prefer shortcrust pastry others flaky Up to you |||Leave out the beek, as that might be where you are going wrong.

Is great.|||take one beek and put in a pie with some ale and bake for a while in a hot oven , lol sorry could not resist
